Abstract

The quality control of human milk during pasteurization involves the determination of titratable acidity (Dornic acidity), creamatocyte determination, and microbiological control. At the Human Milk Bank of Sorocaba, coordinated by the Nutrition and Dietetics Service since 2020, it was identified that the pasteurization process performed internally had failures due to the need to send samples for external analysis, causing costs, delays, and waste. This project implemented the Dornic acidity and creamatocrit tests during pasteurization and microbiological analysis in partnership with the State Center for Clinical Analysis of the South Zone (CEAC SUL, Centro Estadual de Análises Clínicas da Zona Sul) laboratory, reducing the time for report release and improving the assertiveness of quality control. As a result, there was a significant reduction in costs and processing time, as well as improvements in the quality of human milk provided.
